Ingredients
5.5 (3 Rib) Prime Rib Roast cut at ribs and tied
2 sticks softened sweet cream salted butter
10 Cloves of garlic (freshly minced)
1 tbsp kosher salt
2 tbsp Herbs de Provence
1/2 tsp freshly ground pepper
Directions
Let Prime Rib Roast sit at room temperature 1-2 hours
Preheat oven to 500 degrees
Place rack on 2nd to bottom rung
Combine butter and all spices together and slather all over Prime Rib Roast including ribs
Place Prime Rib Roast in shallow roasting pan using ribs as it’s rack.
Roast 30 minutes at 500 degrees
Lower heat to 325 degrees for 1.5 more hours
Use your instincts and start checking the temperature about 15 -30 minutes in advance and cook until 125 in the center.
Remove from oven, tent and let rest 20 minutes.
Slice and serve your perfectly medium rare Prime Rib Roast and serve with Garlic Mashed Potatoes and Baked Asparagus. Horseradish is optional.
