Ingredients:
8 Roasted and peeled Hatch green chiles roughly chopped
2 Roasted and peeled Serrano jalapeños finely chopped
1/2 finely chopped yellow onion
5 cloves finely minced garlic
1 lb freshly grated white cheddar cheese (Boar’s Head)
2 tablespoons sweet cream salted butter
Instructions:
In a large non stick frying pan, over medium heat sauté onions and garlic in butter. Once onions are translucent add chopped green chiles and jalapeños. Mix all ingredients together and cook for about two minutes slowly adding in the grated cheese. Fold in all the ingredients, cover and lower heat to low. Using a glass lid is helpful to see how the cheese is melting. Continue to mix and fold until you reach your desired consistency. The secret is to slowly melt the cheese to achieve a decadent consistency and avoid separation of ingredients. Enjoy!
